Ingredients
- 2 medium white potatoes, peeled and diced into 1/2-inch cubes
- 2 medium sweet potatoes, peeled and diced into 1/2-inch cubes
- 2 tablespoons olive oil (or butter)
- 1 medium onion, thinly sliced
- 1 large apple (such as Honeycrisp or Fuji), peeled and diced
- 1 tablespoon maple syrup
- 1/2 teaspoon ground cinnamon
- Salt and black pepper, to taste
- Optional garnish: Fresh parsley, chopped (for a pop of color)
Instructions
Step 1: Prepare the Potatoes
- Bring a large pot of salted water to a boil. Add the diced white and sweet potatoes.
- Cook for 5–6 minutes, or until slightly tender but not fully cooked. Drain and set aside.
Step 2: Sauté the Onions and Apples
- Heat 1 tablespoon of olive oil in a large skillet over medium heat.
- Add the sliced onion and cook, stirring occasionally, until soft and caramelized, about 8–10 minutes.
- Stir in the diced apple and cook for an additional 3–4 minutes, until the apple softens slightly. Remove from the skillet and set aside.
Step 3: Cook the Potatoes
- Add the remaining 1 tablespoon of olive oil to the same skillet. Increase the heat to medium-high.
- Add the drained potatoes and spread them into a single layer.
- Cook for 8–10 minutes, stirring occasionally, until the potatoes are golden brown and crispy.
Step 4: Combine and Season
- Lower the heat to medium. Add the onion and apple mixture back to the skillet with the potatoes.
- Drizzle with maple syrup, sprinkle with cinnamon, and season with salt and black pepper to taste.
- Stir gently to combine and cook for an additional 2–3 minutes to let the flavors meld.
