Ingredients

For the Donuts:

  • 3 1/4 cups all-purpose flour (plus more for dusting)
  • 1/4 cup granulated sugar
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon ground nutmeg (optional, for flavor)
  • 3/4 cup whole milk, at room temperature
  • 2 large eggs, at room temperature
  • 1 teaspoon vanilla extract
  • 1/4 cup unsalted butter, melted
  • 1/3 cup fresh strawberry puree (about 3–4 strawberries blended)
  • Vegetable oil (for frying)

For the Strawberry Glaze:

  • 1/2 cup fresh strawberry puree
  • 1 1/2 cups powdered sugar, sifted
  • 1 teaspoon lemon juice

Instructions

Step 1: Prepare the Dough

  1. In a large bowl, whisk together the flour, sugar, baking powder, salt, and nutmeg.
  2. In a separate bowl, whisk together the milk, eggs, vanilla extract, melted butter, and strawberry puree.
  3. Gradually add the wet ingredients to the dry ingredients, mixing until a soft dough forms.
  4. Turn the dough out onto a lightly floured surface and knead gently for 1–2 minutes until smooth. Do not overwork the dough.

Step 2: Cut the Donuts

  1. Roll the dough out to about 1/2-inch thickness.
  2. Use a 3-inch round cutter to cut out donuts. For the centers, use a smaller cutter (about 1 inch). Gather scraps, re-roll, and cut as needed.

Step 3: Heat the Oil

  1. In a deep fryer or large, heavy-bottomed pot, heat vegetable oil to 350°F (175°C). Ensure the oil is deep enough to fully submerge the donuts.

Step 4: Fry the Donuts

  1. Carefully lower a few donuts into the hot oil, ensuring not to overcrowd the pot.
  2. Fry for 1–2 minutes per side, or until golden brown.
  3. Remove the donuts with a slotted spoon and transfer them to a wire rack lined with paper towels to drain. Repeat with the remaining donuts and holes.

Step 5: Make the Strawberry Glaze

  1. In a medium bowl, whisk together the strawberry puree, powdered sugar, and lemon juice until smooth and glossy. Adjust consistency with more powdered sugar or puree as needed.

Step 6: Glaze the Donuts

  1. While the donuts are still slightly warm, dip the tops into the strawberry glaze, letting the excess drip off.
  2. Place the glazed donuts back on the wire rack to set.
