Yield
Makes 12–15 donuts
Ingredients
For the Donuts:
- 3 1/4 cups all-purpose flour (plus more for dusting)
- 1/4 cup granulated sugar
- 2 teaspoons baking powder
- 1 teaspoon salt
- 1/2 teaspoon ground nutmeg (optional, for flavor)
- 3/4 cup whole milk, at room temperature
- 2 large eggs, at room temperature
- 1 teaspoon vanilla extract
- 1/4 cup unsalted butter, melted
- 1/3 cup fresh strawberry puree (about 3–4 strawberries blended)
- Vegetable oil (for frying)
For the Strawberry Glaze:
- 1/2 cup fresh strawberry puree
- 1 1/2 cups powdered sugar, sifted
- 1 teaspoon lemon juice
Instructions
Step 1: Prepare the Dough
- In a large bowl, whisk together the flour, sugar, baking powder, salt, and nutmeg.
- In a separate bowl, whisk together the milk, eggs, vanilla extract, melted butter, and strawberry puree.
- Gradually add the wet ingredients to the dry ingredients, mixing until a soft dough forms.
- Turn the dough out onto a lightly floured surface and knead gently for 1–2 minutes until smooth. Do not overwork the dough.
Step 2: Cut the Donuts
- Roll the dough out to about 1/2-inch thickness.
- Use a 3-inch round cutter to cut out donuts. For the centers, use a smaller cutter (about 1 inch). Gather scraps, re-roll, and cut as needed.
Step 3: Heat the Oil
- In a deep fryer or large, heavy-bottomed pot, heat vegetable oil to 350°F (175°C). Ensure the oil is deep enough to fully submerge the donuts.
Step 4: Fry the Donuts
- Carefully lower a few donuts into the hot oil, ensuring not to overcrowd the pot.
- Fry for 1–2 minutes per side, or until golden brown.
- Remove the donuts with a slotted spoon and transfer them to a wire rack lined with paper towels to drain. Repeat with the remaining donuts and holes.
Step 5: Make the Strawberry Glaze
- In a medium bowl, whisk together the strawberry puree, powdered sugar, and lemon juice until smooth and glossy. Adjust consistency with more powdered sugar or puree as needed.
Step 6: Glaze the Donuts
- While the donuts are still slightly warm, dip the tops into the strawberry glaze, letting the excess drip off.
- Place the glazed donuts back on the wire rack to set.
Kitchen Tips
- Oil Temperature: Maintain the oil temperature between 350°F–375°F to ensure even frying.
- Don’t Overmix: Overworking the dough can result in tough donuts.
- Strain the Puree: For a smoother glaze, strain the strawberry puree to remove seeds.
- Storage: Enjoy donuts fresh, as they are best within a day. Store leftovers in an airtight container for up to 2 days.
- Fry the Holes: Don’t waste the centers! Fry them as donut holes and glaze them too.
Enjoy these Strawberry Glazed Donuts with their crispy edges, fluffy centers, and irresistible fruity glaze—a true indulgence!
