Strawberry Bomb Donuts

Ingredients

For the Donuts:

  • 3 1/2 cups all-purpose flour
  • 1 packet (2 1/4 teaspoons) active dry yeast
  • 1/4 cup granulated sugar
  • 1 teaspoon salt
  • 3/4 cup whole milk, warmed (110°F)
  • 1/4 cup unsalted butter, melted
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • Vegetable oil (for frying)

For the Filling:

  • 1 cup strawberry jam (preferably seedless)
  • 1 tablespoon lemon juice (optional, for brightness)

For Coating:

  • 1/2 cup granulated sugar
  • 1 teaspoon cinnamon (optional)
  • powdered sugar to dust (optional)

Instructions

Prepare the Dough

  • In a small bowl, combine the warm milk, yeast, and 1 tablespoon of sugar. Let sit for 5–10 minutes until foamy.
  • In a large bowl, whisk together the flour, remaining sugar, and salt.
  • Add the yeast mixture, melted butter, eggs, and vanilla extract. Mix until a dough forms.
  • Knead the dough on a floured surface for 8–10 minutes until smooth and elastic.
  • Place the dough in a greased bowl, cover, and let rise in a warm place for 1–1.5 hours, or until doubled in size.

Shape and Fry the Donuts

  • Roll out the dough to 1/2-inch thickness and cut out rounds using a 3-inch cutter.
  • Place the rounds on a parchment-lined baking sheet, cover lightly, and let rise for 30 minutes.
  • Heat oil in a deep fryer or large pot to 350°F (175°C).
  • Fry donuts in batches for 1–2 minutes per side until golden brown. Drain on a wire rack.

Fill and Coat the Donuts

  • Mix the strawberry jam with lemon juice, if using.
  • Transfer the jam to a piping bag fitted with a small round tip. Poke a hole in each donut and fill with jam.
  • Roll warm donuts in sugar or a sugar-cinnamon mixture.

Serve

Enjoy fresh, or store in an airtight container for up to 2 days.
