Ingredients
For the Donuts:
- 3 1/2 cups all-purpose flour
- 1 packet (2 1/4 teaspoons) active dry yeast
- 1/4 cup granulated sugar
- 1 teaspoon salt
- 3/4 cup whole milk, warmed (110°F)
- 1/4 cup unsalted butter, melted
- 2 large eggs, room temperature
- 1 teaspoon vanilla extract
- Vegetable oil (for frying)
For the Filling:
- 1 cup strawberry jam (preferably seedless)
- 1 tablespoon lemon juice (optional, for brightness)
For Coating:
- 1/2 cup granulated sugar
- 1 teaspoon cinnamon (optional)
- powdered sugar to dust (optional)
Instructions
Prepare the Dough
- In a small bowl, combine the warm milk, yeast, and 1 tablespoon of sugar. Let sit for 5–10 minutes until foamy.
- In a large bowl, whisk together the flour, remaining sugar, and salt.
- Add the yeast mixture, melted butter, eggs, and vanilla extract. Mix until a dough forms.
- Knead the dough on a floured surface for 8–10 minutes until smooth and elastic.
- Place the dough in a greased bowl, cover, and let rise in a warm place for 1–1.5 hours, or until doubled in size.
Shape and Fry the Donuts
- Roll out the dough to 1/2-inch thickness and cut out rounds using a 3-inch cutter.
- Place the rounds on a parchment-lined baking sheet, cover lightly, and let rise for 30 minutes.
- Heat oil in a deep fryer or large pot to 350°F (175°C).
- Fry donuts in batches for 1–2 minutes per side until golden brown. Drain on a wire rack.
Fill and Coat the Donuts
- Mix the strawberry jam with lemon juice, if using.
- Transfer the jam to a piping bag fitted with a small round tip. Poke a hole in each donut and fill with jam.
- Roll warm donuts in sugar or a sugar-cinnamon mixture.
Serve
