Ingredients
For the Chicken Rolls:
- 4 boneless, skinless chicken breasts
- Salt and pepper, to taste
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 2 tablespoons olive oil
For the Filling:
- 2 cups fresh spinach, chopped
- 1/2 cup crumbled feta cheese
- 1/4 cup sun-dried tomatoes, chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil
For the Glaze:
- 2 tablespoons honey
- 1 tablespoon lemon juice
- 1 tablespoon olive oil
Instructions
Step 1: Prepare the Chicken
- Preheat your oven to 375°F (190°C).
- Place the chicken breasts between two sheets of plastic wrap and pound them to an even 1/4-inch thickness using a meat mallet.
- Season both sides of the chicken with salt, pepper, garlic powder, and Italian seasoning.
Step 2: Make the Filling
- Heat 1 tablespoon of olive oil in a skillet over medium heat.
- Sauté the chopped spinach and minced garlic until wilted, about 2–3 minutes. Remove from heat and let cool slightly.
- In a bowl, mix the sautéed spinach, feta cheese, and sun-dried tomatoes.
Step 3: Assemble the Rolls
- Divide the filling evenly among the chicken breasts, placing the filling in the center of each.
- Roll each chicken breast tightly around the filling and secure with toothpicks.
Step 4: Sear and Bake
- Heat 2 tablespoons of olive oil in an oven-safe skillet over medium-high heat.
- Sear the chicken rolls on all sides until golden brown, about 2–3 minutes per side.
- Mix the honey, lemon juice, and olive oil to create a glaze. Brush the glaze over the chicken rolls.
- Transfer the skillet to the preheated oven and bake for 20–25 minutes or until the chicken is cooked through (internal temperature of 165°F/74°C).
Step 5: Serve
- Remove toothpicks before serving. Drizzle any remaining glaze from the skillet over the chicken rolls.
- Serve in whole pieces or cut into smaller pieces and serve hot with a side of vegetables, rice, or a fresh salad.
