For the Chicken Rolls:

  • 4 boneless, skinless chicken breasts

  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 2 tablespoons olive oil

  • 2 cups fresh spinach, chopped
  • 1/2 cup crumbled feta cheese
  • 1/4 cup sun-dried tomatoes, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil

For the Glaze:

  • 2 tablespoons honey
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil

Instructions

Step 1: Prepare the Chicken

  1. Preheat your oven to 375°F (190°C).
  2. Place the chicken breasts between two sheets of plastic wrap and pound them to an even 1/4-inch thickness using a meat mallet.
  3. Season both sides of the chicken with salt, pepper, garlic powder, and Italian seasoning.

Step 2: Make the Filling

  1. Heat 1 tablespoon of olive oil in a skillet over medium heat.
  2. Sauté the chopped spinach and minced garlic until wilted, about 2–3 minutes. Remove from heat and let cool slightly.

Step 3: Assemble the Rolls

  1. Divide the filling evenly among the chicken breasts, placing the filling in the center of each.
  2. Roll each chicken breast tightly around the filling and secure with toothpicks.

Step 4: Sear and Bake

  1. Heat 2 tablespoons of olive oil in an oven-safe skillet over medium-high heat.
  2. Sear the chicken rolls on all sides until golden brown, about 2–3 minutes per side.
  3. Mix the honey, lemon juice, and olive oil to create a glaze. Brush the glaze over the chicken rolls.
  4. Transfer the skillet to the preheated oven and bake for 20–25 minutes or until the chicken is cooked through (internal temperature of 165°F/74°C).

Step 5: Serve

  1. Remove toothpicks before serving. Drizzle any remaining glaze from the skillet over the chicken rolls.
  2. Serve in whole pieces or cut into smaller pieces and serve hot with a side of vegetables, rice, or a fresh salad.
