Ingredients
For the Salted Caramel:
- 1/2 cup granulated sugar
- 3 tablespoons unsalted butter, cut into pieces

- 1/2 teaspoon vanilla extract
For the Chocolate Shell:
- 12 oz (340 g) semi-sweet or dark chocolate, chopped (or chocolate chips)
- 2 teaspoons coconut oil or vegetable oil
Instructions
Step 1: Make the Salted Caramel
- In a medium saucepan over medium heat, melt the sugar, stirring constantly until it turns a deep amber color (about 5-7 minutes).
- Carefully add the butter (it will bubble up). Stir until fully melted.
- Slowly pour in the heavy cream while stirring continuously. Allow the mixture to boil for 1 minute.
- Remove from heat and stir in the sea salt and vanilla extract. Let it cool slightly.
Step 2: Melt the Chocolate
- In a heatproof bowl, melt the chocolate and coconut oil over a pot of simmering water (double boiler method) or in the microwave in 20-second intervals, stirring each time until smooth.
Step 3: Assemble the Cups
- Line a mini muffin tin with paper liners.
- Add 1 teaspoon of melted chocolate to the bottom of each liner and use the back of a spoon to spread the chocolate slightly up the sides.
- Chill the muffin tin in the refrigerator for 10 minutes to set the chocolate.
- Spoon 1/2 teaspoon of the cooled salted caramel into each cup.
- Cover with another teaspoon of melted chocolate, ensuring the caramel is fully covered.
- Sprinkle a pinch of sea salt on top of each cup.
Step 4: Chill and Set
Refrigerate for at least 1 hour until the chocolate is fully set. Peel away the liners and enjoy.
