Ingredients

For the Salted Caramel:

  • 1/2 cup granulated sugar
  • 3 tablespoons unsalted butter, cut into pieces
  • 3 tablespoons heavy cream
  • 1/2 teaspoon sea salt (plus extra for topping)
  • 1/2 teaspoon vanilla extract

For the Chocolate Shell:

  • 12 oz (340 g) semi-sweet or dark chocolate, chopped (or chocolate chips)
  • 2 teaspoons coconut oil or vegetable oil

Instructions

Step 1: Make the Salted Caramel

  1. In a medium saucepan over medium heat, melt the sugar, stirring constantly until it turns a deep amber color (about 5-7 minutes).
  2. Carefully add the butter (it will bubble up). Stir until fully melted.
  3. Slowly pour in the heavy cream while stirring continuously. Allow the mixture to boil for 1 minute.
  4. Remove from heat and stir in the sea salt and vanilla extract. Let it cool slightly.

Step 2: Melt the Chocolate

  1. In a heatproof bowl, melt the chocolate and coconut oil over a pot of simmering water (double boiler method) or in the microwave in 20-second intervals, stirring each time until smooth.

Step 3: Assemble the Cups

  1. Line a mini muffin tin with paper liners.
  2. Add 1 teaspoon of melted chocolate to the bottom of each liner and use the back of a spoon to spread the chocolate slightly up the sides.
  3. Chill the muffin tin in the refrigerator for 10 minutes to set the chocolate.
  4. Spoon 1/2 teaspoon of the cooled salted caramel into each cup.
  5. Cover with another teaspoon of melted chocolate, ensuring the caramel is fully covered.
  6. Sprinkle a pinch of sea salt on top of each cup.

Step 4: Chill and Set
Refrigerate for at least 1 hour until the chocolate is fully set. Peel away the liners and enjoy.
