Ingredients

For the Dough:

  • 3 1/2 cups all-purpose flour (plus extra for dusting)
  • 1/4 cup granulated sugar
  • 1 packet (2 1/4 tsp) active dry yeast
  • 1/2 teaspoon salt
  • 3/4 cup whole milk, warmed
  • 1/4 cup unsalted butter, melted
  • 2 large eggs

For the Raspberry Filling:

  • 2 cups fresh or frozen raspberries
  • 1/4 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract

For the Cream Cheese Glaze:

  • 4 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 2–3 tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions

Step 1: Prepare the Dough

  1. In a large bowl, combine the flour, sugar, yeast, and salt.
  2. In a separate bowl, whisk together the warm milk, melted butter, and eggs. Gradually add the wet ingredients to the dry ingredients, mixing until a dough forms.
  3. Knead the dough on a floured surface for about 8–10 minutes, or until smooth and elastic.
  4. Place the dough in a greased bowl, cover with a clean kitchen towel, and let rise in a warm place for 1–1.5 hours, or until doubled in size.

Step 2: Make the Raspberry Filling

  1. In a saucepan, combine raspberries, sugar, cornstarch, and vanilla. Cook over medium heat, stirring often, until the mixture thickens (about 5 minutes).
  2. Remove from heat and let cool completely.

Step 3: Assemble the Rolls

  1. Punch down the risen dough and roll it out on a floured surface into a 12x16-inch rectangle.
  2. Spread the cooled raspberry filling evenly over the dough, leaving a 1/2-inch border.
  3. Roll up the dough tightly from the long side, then slice into 12 equal rolls.
  4. Arrange the rolls in a greased 9x13-inch baking pan. Cover and let rise for 30–45 minutes, or until puffy.

Step 4: Bake the Rolls

  1. Preheat your oven to 350°F (175°C).
  2. Bake the rolls for 25–30 minutes, or until golden brown. Let cool slightly before glazing.

Step 5: Prepare the Cream Cheese Glaze

  1. In a medium bowl, beat the softened cream cheese, powdered sugar, milk, and vanilla until smooth. Adjust the consistency with more milk if needed.
  2. Drizzle the glaze over the warm rolls and serve.
