Ingredients
For the Dough:
- 3 1/2 cups all-purpose flour (plus extra for dusting)
- 1/4 cup granulated sugar
- 1 packet (2 1/4 tsp) active dry yeast
- 1/2 teaspoon salt
- 3/4 cup whole milk, warmed
- 1/4 cup unsalted butter, melted
- 2 large eggs
For the Raspberry Filling:
- 2 cups fresh or frozen raspberries
- 1/4 cup granulated sugar
- 1 tablespoon cornstarch
- 1 teaspoon vanilla extract
For the Cream Cheese Glaze:
- 4 ounces cream cheese, softened
- 1 cup powdered sugar
- 2–3 tablespoons milk
- 1/2 teaspoon vanilla extract
Instructions
Step 1: Prepare the Dough
- In a large bowl, combine the flour, sugar, yeast, and salt.
- In a separate bowl, whisk together the warm milk, melted butter, and eggs. Gradually add the wet ingredients to the dry ingredients, mixing until a dough forms.
- Knead the dough on a floured surface for about 8–10 minutes, or until smooth and elastic.
- Place the dough in a greased bowl, cover with a clean kitchen towel, and let rise in a warm place for 1–1.5 hours, or until doubled in size.
Step 2: Make the Raspberry Filling
- In a saucepan, combine raspberries, sugar, cornstarch, and vanilla. Cook over medium heat, stirring often, until the mixture thickens (about 5 minutes).
- Remove from heat and let cool completely.
Step 3: Assemble the Rolls
- Punch down the risen dough and roll it out on a floured surface into a 12x16-inch rectangle.
- Spread the cooled raspberry filling evenly over the dough, leaving a 1/2-inch border.
- Roll up the dough tightly from the long side, then slice into 12 equal rolls.
- Arrange the rolls in a greased 9x13-inch baking pan. Cover and let rise for 30–45 minutes, or until puffy.
Step 4: Bake the Rolls
- Preheat your oven to 350°F (175°C).
- Bake the rolls for 25–30 minutes, or until golden brown. Let cool slightly before glazing.
Step 5: Prepare the Cream Cheese Glaze
- In a medium bowl, beat the softened cream cheese, powdered sugar, milk, and vanilla until smooth. Adjust the consistency with more milk if needed.
- Drizzle the glaze over the warm rolls and serve.
