A delicious twist on the classic Reuben, the Rachel swaps corned beef for savory ham and pairs it with tangy sauerkraut, melted Swiss cheese, and buttery grilled rye bread for the perfect balance of flavors and textures.

Ingredients
For the Sandwich:
- 2 slices rye bread
- 3 slices thinly sliced ham (approx. 3 oz / 85g)
- 1/2 cup sauerkraut, drained
- 2 slices Swiss cheese (1 oz / 28g each)
- 1 tablespoon unsalted butter, softened
- 1 tablespoon Russian or Thousand Island dressing
Instructions
Step 1: Preheat the Griddle
Preheat a griddle or skillet over medium heat.
Step 2: Prepare the Bread
- Spread the softened butter on one side of each slice of rye bread.
- Spread Russian or Thousand Island dressing on the unbuttered side of one slice.
Step 3: Assemble the Sandwich
- Place one slice of Swiss cheese on the dressing-spread side of the bread.
- Layer the thinly sliced ham evenly over the cheese.
- Top with the drained sauerkraut, spreading it out evenly.
- Add the second slice of Swiss cheese on top of the sauerkraut.
- Close the sandwich with the remaining slice of bread, with the buttered side facing out.
Step 4: Grill the Sandwich
- Place the assembled sandwich on the preheated griddle.
- Grill for 3–4 minutes on each side, or until the bread is golden brown and crispy and the cheese has melted.
- Press gently with a spatula for even toasting.
Step 5: Serve
- Remove the sandwich from the griddle and cut in half if desired.
- Serve hot.

- Rinse and drain the sauerkraut well to reduce excess saltiness if desired.
- For extra crunch, use a panini press or place a weighted pan on top while grilling.
