Ingredients

For the Bars:

  • 1 cup (2 sticks) unsalted butter, softened to room temperature
  • 1 cup creamy natural peanut butter
  • 1 cup granulated sugar
  • 1 cup packed light brown sugar
  • 2 large eggs, at room temperature
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

For the Frosting:

  • 1/2 cup creamy natural peanut butter
  • 4 cups powdered sugar, sifted
  • 1/4 cup (1/2 stick) unsalted butter, softened
  • 1/3 cup whole milk or heavy cream (plus more if needed for consistency)
  • 1 teaspoon vanilla extract

Instructions


  1. Preheat and Prepare:
    Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking pan and line it with parchment paper for easy removal.

  1. Make the Cookie Bar Dough:
    • In a large mixing bowl, cream together the butter, peanut butter, granulated sugar, and brown sugar until light and fluffy (about 2–3 minutes).
    • Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
