Yield

Serves 6–8 (Makes 12 Taco Cups)

Ingredients

For the Taco Cups:

  • 12 small flour tortillas (or use store-bought wonton wrappers for easier preparation)
  • 1/2 pound ground beef (or turkey, chicken, or plant-based alternative)
  • 1/2 packet taco seasoning mix (about 1 tablespoon)
  • 1/3 cup water
  • 1/2 cup shredded cheddar or Mexican blend cheese

For the Toppings:

  • 1/2 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/4 cup sliced black olives
  • 1/4 cup sour cream
  • 1/4 cup salsa
  • Fresh cilantro, chopped (optional)

Instructions

Step 1: Prepare the Tortilla Cups

  1. Preheat your oven to 375°F (190°C).
  2. Lightly grease a muffin tin.
  3. If using small tortillas, cut them into circles (about 3-4 inches in diameter) using a round cutter. Press each tortilla circle into the muffin tin to form a cup shape.
  4. Bake the tortilla cups for 5–7 minutes, until slightly crispy but not fully browned.

Step 2: Cook the Taco Filling

  1. In a skillet over medium heat, cook the ground beef until browned and fully cooked.
  2. Drain any excess fat, then add the taco seasoning and water. Stir to combine and simmer for 3–4 minutes, until the mixture thickens.

Step 3: Assemble the Taco Cups

  1. Remove the pre-baked tortilla cups from the oven.
  2. Spoon a small amount of the taco filling into each cup, then top with shredded cheese.
  3. Return the muffin tin to the oven and bake for an additional 5–7 minutes, or until the cheese is melted and bubbly.

Step 4: Add Toppings

  1. Remove the taco cups from the muffin tin and let them cool slightly.
  2. Top each taco cup with shredded lettuce, diced tomatoes, black olives, a dollop of sour cream, salsa, and cilantro if desired.

Step 5: Serve

  1. Arrange the taco cups on a serving platter and enjoy immediately!

How It Looks and Tastes

Crispy, golden tortilla cups filled with flavorful, seasoned beef and melted cheese. Topped with fresh, colorful ingredients, these taco cups are as fun to eat as they are delicious!

Kitchen Tips

  1. Use Wonton Wrappers: For a quick alternative, line the muffin tin with wonton wrappers instead of tortillas.
  2. Customizable Fillings: Swap the beef for chicken, beans, or veggies to fit your preferences.
  3. Add Some Spice: Sprinkle chopped jalapeños or hot sauce on top for extra heat.
  4. Make Ahead: Cook the beef mixture ahead of time and assemble the cups just before baking.
  5. Cheese Variations: Try pepper jack, mozzarella, or queso fresco for a twist.
  6. Keep Them Crispy: Serve immediately to enjoy the crispiness of the tortilla cups.
  7. Garnish for Flair: Add sliced avocado, pickled onions, or a drizzle of lime crema for a gourmet touch.
  8. Vegetarian Option: Use seasoned black beans or refried beans instead of meat.
  9. Dipping Sauce: Serve with guacamole, salsa verde, or chipotle aioli on the side.
  10. Mini Muffin Tin: For even smaller bites, use a mini muffin tin and adjust the size of the tortilla circles.

These Mini Taco Cups are a guaranteed crowd-pleaser, combining all the best taco flavors into a perfectly portable bite. They’re fun, festive, and absolutely delicious!
