Ingredients

For the Peanut Butter Filling:

  • 1 cup natural peanut butter (stirred well)
  • 1/4 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • Pinch of salt (optional)

For the Chocolate Shell:

  • 12 oz (340 g) semi-sweet or dark chocolate, chopped (or chocolate chips)
  • 2 teaspoons coconut oil or vegetable oil

Garnish:

  • Finely chopped peanuts

Instructions

Step 1: Prepare the Filling
In a bowl, stir together the natural peanut butter, powdered sugar, vanilla extract, and salt until smooth. Chill the filling in the refrigerator for 10-15 minutes to firm up slightly.

Step 2: Melt the Chocolate
In a heatproof bowl, melt the chocolate and coconut oil over a pot of simmering water (double boiler method) or in the microwave in 20-second intervals, stirring each time until smooth.

Step 3: Assemble the Cups

  1. Line a mini muffin tin with paper liners.
  2. Add 1 teaspoon of melted chocolate to the bottom of each liner. Use the back of a spoon to spread the chocolate slightly up the sides.
  3. Chill the muffin tin in the refrigerator for 10 minutes to set the chocolate.
  4. Roll small balls of the peanut butter filling (about 1 teaspoon each), flatten slightly, and place one in each chocolate-lined cup.
  5. Cover with another teaspoon of melted chocolate, ensuring the filling is fully covered.
  6. Gently tap the muffin tin on the counter to smooth the tops and remove air bubbles. Sprinkle a few finely chopped peanuts on each peanut butter cup.

Step 4: Chill and Set
Refrigerate for at least 1 hour until the chocolate is firm. Peel away the liners and enjoy.
