Ingredients
For the Peanut Butter Filling:
- 1 cup natural peanut butter (stirred well)
- 1/4 cup powdered sugar
- 1/2 teaspoon vanilla extract
- Pinch of salt (optional)
For the Chocolate Shell:
- 12 oz (340 g) semi-sweet or dark chocolate, chopped (or chocolate chips)
- 2 teaspoons coconut oil or vegetable oil
Garnish:
- Finely chopped peanuts
Instructions
Step 1: Prepare the Filling
In a bowl, stir together the natural peanut butter, powdered sugar, vanilla extract, and salt until smooth. Chill the filling in the refrigerator for 10-15 minutes to firm up slightly.
Step 2: Melt the Chocolate
In a heatproof bowl, melt the chocolate and coconut oil over a pot of simmering water (double boiler method) or in the microwave in 20-second intervals, stirring each time until smooth.
Step 3: Assemble the Cups
- Line a mini muffin tin with paper liners.
- Add 1 teaspoon of melted chocolate to the bottom of each liner. Use the back of a spoon to spread the chocolate slightly up the sides.
- Chill the muffin tin in the refrigerator for 10 minutes to set the chocolate.
- Roll small balls of the peanut butter filling (about 1 teaspoon each), flatten slightly, and place one in each chocolate-lined cup.
- Cover with another teaspoon of melted chocolate, ensuring the filling is fully covered.
- Gently tap the muffin tin on the counter to smooth the tops and remove air bubbles. Sprinkle a few finely chopped peanuts on each peanut butter cup.
Step 4: Chill and Set
Refrigerate for at least 1 hour until the chocolate is firm. Peel away the liners and enjoy.
