  • 1/2 cup (1 stick) unsalted butter, melted
  • 1 cup all-purpose flour
  • 1 cup granulated sugar

  • 1 cup whole milk
  • 1 teaspoon vanilla extract

For the Lemon Filling:

  • 1/3 cup fresh lemon juice (about 2 lemons)
  • Zest of 1 lemon
  • 1 cup granulated sugar
  • 2 cups water

For Garnish:

  • powdered sugar

Instructions

Step 1: Preheat the Oven

  • Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish.

Step 2: Prepare the Batter

  • Pour the melted butter evenly into the prepared baking dish.
  • In a medium bowl, whisk together the flour, sugar, baking powder, and salt.
  • Gradually add the milk and vanilla extract, stirring until just combined.
  • Pour the batter evenly over the melted butter in the baking dish. Do not stir.

Step 3: Make the Lemon Filling

  • In a saucepan, combine the lemon juice, lemon zest, granulated sugar, and water. Bring to a gentle boil over medium heat, stirring until the sugar dissolves. Remove from heat.
  • Carefully pour the lemon mixture over the batter in the baking dish. Do not stir; the layers will combine during baking.

Step 4: Bake the Cobbler

  • Bake for 40–45 minutes, or until the top is golden brown and set.
  • Allow the cobbler to cool slightly, sprinkle on powdered sugar and serve.
