Step 1: Preheat the Oven
- Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish.
Step 2: Prepare the Batter
- Pour the melted butter evenly into the prepared baking dish.
- In a medium bowl, whisk together the flour, sugar, baking powder, and salt.
- Gradually add the milk and vanilla extract, stirring until just combined.
- Pour the batter evenly over the melted butter in the baking dish. Do not stir.
Step 3: Make the Lemon Filling
- In a saucepan, combine the lemon juice, lemon zest, granulated sugar, and water. Bring to a gentle boil over medium heat, stirring until the sugar dissolves. Remove from heat.
- Carefully pour the lemon mixture over the batter in the baking dish. Do not stir; the layers will combine during baking.
Step 4: Bake the Cobbler
- Bake for 40–45 minutes, or until the top is golden brown and set.
- Allow the cobbler to cool slightly, sprinkle on powdered sugar and serve.
