Ingredients

For the Salad:

  • 6 cups mixed salad greens (romaine, spinach, arugula, or a mix)
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, sliced
  • 1/2 cup shredded carrots
  • 1/2 cup red bell pepper, diced
  • 1/4 cup red onion, thinly sliced
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup croutons
  • 1/4 cup bacon bits (optional)
  • 1/4 cup sunflower seeds or sliced almonds

For the Dressing:

  • 1/2 cup ranch dressing (or dressing of your choice)
  • 1 tablespoon fresh lemon juice (optional, for a tangy twist)
  • Salt and pepper to taste

Instructions

Assemble the Salad:

  1. Prepare the greens: Wash and dry the mixed salad greens thoroughly. Place them in a large serving bowl.
  2. Add the veggies: Top the greens with cherry tomatoes, cucumber slices, shredded carrots, red bell pepper, and red onion.

Add the Toppings:

  1. Sprinkle the shredded cheddar cheese, croutons, bacon bits, and sunflower seeds (or almonds) evenly over the salad.

Prepare the Dressing:

  1. In a small bowl, whisk together the ranch dressing and lemon juice (if using). Season with salt and pepper to taste.

Serve:

  1. Drizzle the dressing over the salad just before serving, or serve it on the side for guests to add as desired.
