For the Sandwich:

  • 2 large bagels, halved (everything, plain, or cheddar bagels work great)
  • 4 large eggs
  • 1/4 cup whole milk
  • 4 slices bacon (or sausage patties)
  • 1/2 cup shredded cheddar cheese
  • 1/2 avocado, sliced or mashed
  • 2 tablespoons cream cheese or butter (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder (optional)
  • 1 tablespoon butter (for cooking)

For Garnish (Optional):

  • Sliced tomato
  • Fresh spinach or arugula
  • Hot sauce or sriracha

Instructions

Prepare the Bacon:

  • In a skillet over medium heat, cook bacon until crispy (about 5-7 minutes per side). Drain on paper towels and set aside.

Scramble the Eggs:

  • In a bowl, whisk together eggs, milk, salt, pepper, and garlic powder.
  • Heat butter in a non-stick pan over medium-low heat.
  • Pour in the eggs and cook, stirring gently until just set and fluffy. Remove from heat and mix in the shredded cheese.

Toast the Bagels:

  • Toast the bagel halves in a toaster or buttered skillet until golden brown.

Assemble the Sandwich:

  • Spread cream cheese or butter on one side of the toasted bagel.
  • Layer scrambled eggs, crispy bacon, and avocado slices.
  • Add any optional toppings like tomato slices, spinach, or hot sauce.
  • Place the other bagel half on top and gently press down.
