Instructions

Step 1: Make the Broth
Place the turkey carcass in a large pot and cover with 8 cups of water. Bring to a boil, then reduce heat to a simmer. Let it cook for 45 minutes to 1 hour, skimming off any foam or fat that rises to the top. Remove the carcass, strain the broth into a clean pot, and discard the bones. (If using pre-made broth, skip this step.)

Step 2: Sauté the Vegetables
In a large soup pot, heat olive oil or butter over medium heat. Add the onion, carrots, and celery. Sauté for 5–7 minutes until softened. Add the garlic and cook for an additional minute.

Step 3: Combine Ingredients
Pour the turkey broth into the pot with the vegetables. Add the thyme, rosemary, bay leaf, salt, and pepper. Stir to combine.
