Hash Brown Potatoes from Scratch

Golden, crispy individual hash brown patties are the perfect breakfast treat. Simple, flavorful, and made from scratch, they’ll be a family favorite!

Ingredients

  • 4 medium russet potatoes, peeled and shredded
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder (optional)
  • 2 tablespoons all-purpose flour
  • 1 large egg, lightly beaten
  • 2 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • Fresh parsley, chopped, for garnish

Instructions

1. Prepare the Potatoes

Peel and shred the potatoes using a box grater or food processor.
Place the shredded potatoes in a large bowl of cold water. Let them soak for 10–15 minutes to remove excess starch, ensuring crispier hash browns.

2. Drain and Dry
Drain the potatoes in a colander and rinse under cold water.
Spread the shredded potatoes on a clean kitchen towel or paper towels. Press and squeeze out as much moisture as possible.

3. Mix and Shape
In a large bowl, combine the shredded potatoes, salt, pepper, garlic powder (if using), flour, and beaten egg. Mix until well combined.
Take about 1/4 cup of the mixture and form it into a small patty, about 1/2-inch thick. Repeat with the remaining mixture.

4. Cook the Patties
Heat a large skillet over medium heat. Add butter and olive oil, letting them melt and coat the skillet evenly.
Place the patties in the skillet, leaving some space between each one. Cook for 3–4 minutes on each side, or until golden brown and crispy.
Adjust heat as needed to avoid burning and add more butter or oil if necessary.

5. Serve and Garnish
Remove the patties from the skillet and place them on a plate lined with paper towels to drain any excess oil.
Garnish with fresh parsley and serve warm.
