Ingredients
For the Sandwiches:
- 2 large portobello mushroom caps, cleaned and stems removed
- 2 tablespoons olive oil
- 1/4 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 2 tablespoons pesto (store-bought or homemade)
- 4 ounces fresh mozzarella cheese, sliced
- 2 ciabatta rolls or sourdough sandwich bread, sliced
- 1/2 cup baby spinach or arugula (optional)
Optional Garnish:
- Balsamic glaze drizzle
Instructions
Step 1: Prepare the Portobello Mushrooms
- Preheat a grill or grill pan over medium heat.
- Brush the portobello mushroom caps with olive oil and sprinkle with garlic powder, salt, and pepper on both sides.
Step 2: Grill the Mushrooms
- Place the mushrooms on the grill, gill side down, and cook for about 4–5 minutes per side, until tender and lightly charred.
Step 3: Assemble the Sandwiches
- Spread 1 tablespoon of pesto on the inside of each ciabatta roll or slice of bread.
- Place one grilled portobello mushroom on the bottom half of each roll.
- Layer slices of mozzarella cheese on top of the mushrooms.
- Add a handful of baby spinach or arugula, if desired.
Step 4: Melt the Cheese
- Option 1 (Grill): Place the assembled sandwiches back on the grill, close the lid, and grill for 2–3 minutes, or until the cheese is melted.
- Option 2 (Skillet): Heat a skillet over medium-low heat, place the sandwiches in the skillet, and cover with a lid. Cook for 2–3 minutes on each side, or until the cheese is melted and the bread is golden.
Step 5: Serve
- Slice the sandwiches in half and serve warm. Drizzle with balsamic glaze for added flavor, if desired.
