  • 2 cups all-purpose flour
  • 2 teaspoons baking powder

  • 2 large eggs, at room temperature
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract (optional, for extra flavor)
  • 1 cup whole milk, at room temperature
  • 1/4 cup sour cream or plain Greek yogurt, at room temperature

Instructions

Step 1: Prepare the Oven and Muffin Tin

  1. Preheat your oven to 375°F (190°C).
  2. Line a 12-cup muffin tin with paper liners or grease the cups with non-stick spray.

Step 2: Mix the Dry Ingredients

  1. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

Step 3: Cream the Butter and Sugar

  1. In a large bowl, use a hand or stand mixer to cream the butter and sugar until light and fluffy (about 2–3 minutes).
  2. Add the eggs, one at a time, beating well after each addition.
  3. Mix in the vanilla extract and almond extract (if using).

Step 4: Combine Wet and Dry Ingredients

  1. Gradually add the dry ingredients to the butter mixture, alternating with the milk and sour cream. Start and end with the dry ingredients, mixing until just combined. Do not overmix.

Step 5: Fill the Muffin Tin

  1. Divide the batter evenly among the muffin cups, filling each about 3/4 full.

Step 6: Bake

  1. Bake in the preheated oven for 18–22 minutes, or until the tops are golden and a toothpick inserted into the center comes out clean.
  2. Let the muffins cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.

Optional Toppings

  • Sprinkle with powdered sugar once cooled.
  • Add a drizzle of vanilla glaze (mix powdered sugar, milk, and vanilla extract).
