Epic Beef Nachos Supreme

Ingredients

For the Beef Mixture:

  • 1 lb ground beef
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 packet taco seasoning (or homemade taco seasoning)
  • 1/2 cup water

For the Nachos:

  • 1 large bag (12-14 oz) tortilla chips
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 can (15 oz) black beans, drained and rinsed
  • 1/2 cup sliced black olives
  • 1/2 cup pickled jalapeño slices
  • 1 large tomato, diced
  • 1/4 cup chopped green onions
  • 1/4 cup chopped fresh cilantro

Optional Toppings:

  • 1 cup guacamole
  • 1 cup sour cream
  • 1/2 cup salsa

Instructions

Prepare the Beef Mixture:

  1. Cook the beef: Heat olive oil in a skillet over medium heat. Add the chopped onion and cook until softened, about 3 minutes. Add the garlic and cook for another minute.
  2. Brown the beef: Add the ground beef to the skillet, breaking it apart with a spoon, and cook until browned.
  3. Season and simmer: Stir in the taco seasoning and water. Simmer for 5 minutes, stirring occasionally, until the mixture thickens. Set aside.

Assemble the Nachos:

  1. Preheat the oven: Preheat your oven to 375°F (190°C).
  2. Layer the chips and toppings: Spread half of the tortilla chips on a large, oven-safe platter or baking sheet. Sprinkle half of the cheeses, half of the black beans, and half of the beef mixture over the chips. Add another layer of chips and repeat with the remaining toppings, reserving a little cheese for the final sprinkle.
  3. Add olives and jalapeños: Scatter black olives and jalapeño slices over the top layer.

Bake and Serve:

  1. Bake: Place the nachos in the preheated oven and bake for 8-10 minutes, or until the cheese is melted and bubbly.
  2. Top and garnish: Remove from the oven and sprinkle with diced tomatoes, green onions, and fresh cilantro.
  3. Add extras: Serve immediately with guacamole, sour cream, and salsa on the side for dipping.
