Yield: 12 servings

Ingredients:

For the Cake:

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 teaspoons cinnamon
  • 2 cups brown sugar
  • 4 eggs
  • 1 cup vegetable oil (we used grapeseed oil)
  • 1/2 cup chopped nuts (we used almonds, but walnuts are good too)
  • 2 cups grated carrots (3-4 carrots, depending on size)
  • 1 cup canned crushed pineapple, juice drained (or if you are using chunks, break up in the food processor)
  • Optional: 1 cup raisins or chocolate chips or coconut flakes (or a combination of your choice)

For the Cream Cheese Frosting:

  • 1/2 cup butter, at room temperature
  • 8 ounces cream cheese, at room temperature
  • 2 cups confectioners' sugar
  • 1 teaspoon pure vanilla extract
  • Optional: 1/2 cup chopped walnuts for garnish

Instructions:

  1. Preheat Oven:
Preheat the oven to 350°F (175°C).
Grease and flour two 9-inch round cake pans.

  2. Prepare the Cake Batter:
In a mixing bowl, combine flour, baking powder, baking soda, salt, cinnamon, and brown sugar. Stir together with a spatula.
Personal Tip: Sift the dry ingredients to ensure they are well-mixed and to prevent any lumps in your batter.

Peel and finely grate the carrots using a food processor or a grater.
Add the oil, eggs, grated carrots, and drained pineapple to the dry ingredients. Turn the electric mixer onto medium speed and beat until all the ingredients are well combined.
Personal Tip: Be careful not to overmix the batter; mixing just until combined will keep the cake tender.

Fold in the chopped nuts and optional ingredients (raisins, chocolate chips, or coconut flakes) if using.
Personal Tip: Toss the nuts and raisins in a bit of flour before folding them in to prevent them from sinking to the bottom of the cake.

  3. Bake the Cake:
Divide the batter evenly between the prepared cake pans.
Personal Tip: Tap the pans on the counter a few times to release any air bubbles trapped in the batter.

Bake in the preheated oven for 25-30 minutes until a toothpick inserted into the center of the cakes comes out clean.
Remove the cakes from the oven and place them onto a cooling rack. Let cool completely before frosting.
Personal Tip: Allow the cakes to cool in the pans for 10 minutes before turning them out onto the rack to cool completely.

  4. Prepare the Cream Cheese Frosting:
In a large bowl, beat the butter and cream cheese together until smooth and creamy.
Gradually add the confectioners' sugar and beat until smooth.
Personal Tip: Sift the confectioners' sugar before adding it to the mixture to avoid lumps in the frosting.

Add the vanilla extract and mix until well combined.
Personal Tip: For a stiffer frosting, refrigerate it for 20 minutes before using.

  5. Assemble the Cake:
Once the cakes are completely cool, place one cake layer on a serving plate and spread a generous amount of frosting on top.
Personal Tip: Use a serrated knife to level the tops of the cakes before frosting for a more even layer.

Place the second cake layer on top and spread the remaining frosting over the top and sides of the cake.
Optional: Garnish with chopped walnuts if desired.
Refrigerate for at least 30 minutes before serving to allow the frosting to set.
Personal Tip: For a smooth finish, dip your frosting spatula in warm water as you spread the frosting.

Kitchen Tips, Great Ideas, How to Save Money

  1. Choosing Budget-Friendly Ingredients:
Opting for seasonal carrots and pineapples when they're at their peak can save you money and ensure the freshest flavors in your carrot cake. Look for sales or buy in bulk for better deals on nuts, raisins, or chocolate chips. Planning your recipes around what's on sale can significantly cut costs while ensuring quality.

  2. DIY Cake Pans:
Instead of investing in specialty cake pans, use parchment paper to line standard pans. This trick ensures easy release and eliminates the need for extra greasing, saving both time and money. It also reduces cleanup time, making baking more efficient.

  3. Efficient Oven Use:
Maximize oven efficiency by baking both cake layers simultaneously. Position them on separate racks and rotate halfway through baking for even heat distribution, reducing energy consumption. This method not only saves on electricity bills but also ensures evenly baked cakes.

  4. Homemade Frosting Versatility:
Extend the use of cream cheese frosting beyond cakes. It doubles as a delicious spread for breakfast items like bagels or as a dip for fruit, adding versatility to your ingredients and reducing waste. Making your frosting at home is also more cost-effective compared to store-bought options.

  5. Storage and Freshness:
Store leftover cake in an airtight container in the refrigerator to maintain freshness and prevent drying out. Individual slices can be wrapped in plastic wrap and frozen for up to three months, ready for quick indulgences. This method reduces food waste and ensures you always have a sweet treat on hand.

  6. Reusable Baking Essentials:
Invest in reusable silicone baking mats or parchment paper sheets instead of disposable options. These alternatives not only save money over time but also reduce environmental impact. They're easy to clean and can be used for various baking purposes.

  7. Creative Garnishing:
Transform basic ingredients into stunning presentations. Use chopped walnuts or toasted coconut flakes as economical and attractive garnishes for cakes, adding texture and flavor without breaking the bank. Experimenting with different garnishes can elevate the visual appeal of your desserts.

  8. Educational Cooking Resources:
Explore online tutorials, cooking classes, and community forums for free or low-cost resources. They offer valuable tips on baking techniques, ingredient substitutions, and budget-friendly recipes. Learning new skills can enhance your baking repertoire without spending a fortune.

  9. Smart Ingredient Substitutions:
Substitute ingredients like grapeseed oil with vegetable oil or applesauce for a healthier and budget-friendly twist. Experiment with different flavors and textures while staying within your budget constraints. Using what you already have on hand can prevent unnecessary trips to the store and reduce expenses.

  10. Preserving Cake Freshness:
Extend the life of your carrot cake by wrapping it tightly and storing it in the refrigerator. This preserves moisture and flavor, ensuring each slice tastes as fresh as the first. Proper storage techniques can make a significant difference in the longevity and quality of your baked goods.

The Popularity of Combining Carrot and Pineapple in Baking

The combination of carrot and pineapple in baking has grown in popularity due to the unique flavor and texture they bring to desserts. Carrots add a natural sweetness and moisture to cakes, while pineapple introduces a tangy, tropical flavor that complements the earthiness of the carrots. This pairing not only enhances the taste but also adds nutritional benefits, such as fiber, vitamins, and minerals. The bright flavors and moist texture created by this combination have made it a favorite in recipes like carrot cake, where the pineapple's acidity helps to balance the sweetness of the carrots and sugar, resulting in a well-rounded and delicious dessert.
