For the Soup

  • 4 medium russet potatoes, peeled and diced

Instructions

Step 1: Brown the Sausage

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the Italian sausage and cook, breaking it into small pieces, until browned and cooked through, about 5–7 minutes. Remove the sausage with a slotted spoon and set aside.

Step 2: Sauté the Aromatics

  1. In the same pot, add the diced onion and cook for 3–4 minutes, until softened.
  2. Stir in the minced garlic and cook for 1 minute, until fragrant.

Step 3: Simmer the Soup Base

  1. Add the chicken broth, water, and diced potatoes to the pot.
