  • 2 tablespoons fresh parsley, chopped (for garnish) optional
  • Green onions, chopped (for garnish) optional

Instructions

Step 1: Cook the Bacon

  1. In a large pot or Dutch oven, cook the chopped bacon over medium heat until crispy, about 5-7 minutes.
  2. Transfer the bacon to a paper towel-lined plate, leaving about 2 tablespoons of bacon fat in the pot.

Step 2: Sauté the Vegetables

  1. Add the butter to the bacon fat in the pot.
  2. Sauté the onion, garlic, and celery over medium heat until softened, about 5 minutes.

Step 3: Add Potatoes and Broth

  1. Stir in the potatoes, corn, smoked paprika, and dried thyme.
