Creamy Cajun Chicken Tortellini Soup

A hearty soup brimming with bold Cajun spices, tender chicken, and plump tortellini. The creamy broth provides comforting warmth, while the zesty seasoning adds just the right amount of kick.

Ingredients
- 1 lb (about 450 g) chicken breast or thighs, cut into bite-size pieces
- 1 Tbsp Cajun seasoning (plus more to taste)
- 2 Tbsp olive oil (or butter)
- 1 medium onion, diced
- 2 celery stalks, diced (optional)
- 1 red or green bell pepper, diced
- 2 cloves garlic, minced
- 4 cups chicken broth (about 1 liter)
- 1 cup heavy cream (or half-and-half)
- 1 package refrigerated or frozen tortellini (cheese, spinach, or preference)
- Salt and pepper, to taste
- Optional garnish: chopped parsley or green onions
Instructions

Season the Chicken
Toss the chicken pieces with Cajun seasoning. Set aside. -
Sauté the Chicken
In a large pot or Dutch oven over medium-high heat, warm the olive oil. Brown the seasoned chicken until lightly golden (about 5 minutes). Remove the chicken to a plate. -
Cook the Aromatics
In the same pot, sauté the onion, celery, and bell pepper for about 5 minutes. Add the garlic and cook for 1 more minute. -
Combine Broth & Simmer
Pour in the chicken broth, scraping up any browned bits. Return the chicken to the pot and bring to a gentle boil. Reduce heat and simmer for 10 minutes, or until the chicken is fully cooked. -
Add Cream & Tortellini
Stir in the heavy cream. Gently add the tortellini and cook according to package instructions (5–8 minutes). Adjust seasoning with salt, pepper, or extra Cajun seasoning. -
Serve
Ladle into bowls and top with parsley or green onions. Enjoy!
