For the Chowder Soup

  • 6 slices bacon, chopped (reserve a few slices for garnish)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 3 medium potatoes, peeled and diced (about 4 cups)
  • 3 cups corn kernels (fresh or frozen)
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 1 cup whole milk
  • 2 tablespoons all-purpose flour
  • 1 bay leaf
  • 1 tablespoon unsalted butter
  • Salt and freshly ground black pepper, to taste

Instructions

Step 1: Cook the Bacon

  1. In a large pot, cook the chopped bacon over medium heat until crispy.
  2. Remove the bacon with a slotted spoon and set aside for garnish, leaving the bacon fat in the pot.

Step 2: Sauté Vegetables

  1. Add the diced onion to the pot with the bacon fat. Sauté over medium heat until translucent, about 3–4 minutes.
  2. Stir in the minced garlic and cook for an additional minute until fragrant.

Step 3: Cook Potatoes

  1. Sprinkle the flour over the onions and garlic, stirring to coat evenly.
  2. Add the diced potatoes and mix well.
  3. Pour in the chicken broth and add the bay leaf.
  4. Bring the mixture to a simmer, then cover and cook for 10–12 minutes, or until the potatoes are tender.

Step 4: Add Corn and Cream

  1. Stir in the corn kernels, heavy cream, whole milk, and unsalted butter.
  2. Season with salt and freshly ground black pepper to taste.
  3. Allow the chowder to simmer on low heat for an additional 5 minutes, taking care not to let it boil.

Step 5: Finalize and Serve

  1. Remove the bay leaf.
  2. Ladle the chowder into bowls and garnish with the reserved crispy bacon.
  3. Serve hot.

  • For extra depth of flavor, add a pinch of smoked paprika or a few sprigs of thyme when sautéing the onions.
