Ingredients
For the Chowder Soup
- 6 slices bacon, chopped (reserve a few slices for garnish)
- 1 medium onion, diced
- 2 cloves garlic, minced
- 3 medium potatoes, peeled and diced (about 4 cups)
- 3 cups corn kernels (fresh or frozen)
- 3 cups chicken broth
- 1 cup heavy cream
- 1 cup whole milk
- 2 tablespoons all-purpose flour
- 1 bay leaf
- 1 tablespoon unsalted butter
- Salt and freshly ground black pepper, to taste
Instructions
Step 1: Cook the Bacon
- In a large pot, cook the chopped bacon over medium heat until crispy.
- Remove the bacon with a slotted spoon and set aside for garnish, leaving the bacon fat in the pot.
Step 2: Sauté Vegetables
- Add the diced onion to the pot with the bacon fat. Sauté over medium heat until translucent, about 3–4 minutes.
- Stir in the minced garlic and cook for an additional minute until fragrant.
Step 3: Cook Potatoes
- Sprinkle the flour over the onions and garlic, stirring to coat evenly.
- Add the diced potatoes and mix well.
- Pour in the chicken broth and add the bay leaf.
- Bring the mixture to a simmer, then cover and cook for 10–12 minutes, or until the potatoes are tender.
Step 4: Add Corn and Cream
- Stir in the corn kernels, heavy cream, whole milk, and unsalted butter.
- Season with salt and freshly ground black pepper to taste.
- Allow the chowder to simmer on low heat for an additional 5 minutes, taking care not to let it boil.
Step 5: Finalize and Serve
- Remove the bay leaf.
- Ladle the chowder into bowls and garnish with the reserved crispy bacon.
- Serve hot.
Kitchen Tips
- For extra depth of flavor, add a pinch of smoked paprika or a few sprigs of thyme when sautéing the onions.
- If you prefer a thicker chowder, gently mash a few of the potato cubes against the side of the pot and stir well.
- For a vegetarian version, substitute the bacon with smoked paprika and use vegetable broth.
