Ingredients
- 1 Tbsp olive oil
- 1 lb ground Italian sausage (mild or hot) or ground beef
- 1 small onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth (or vegetable broth)
- 1 jar (about 15–16 oz) Alfredo sauce (store-bought or homemade)
- 8–10 lasagna noodles, broken into pieces
- 1 cup shredded mozzarella (or Italian cheese blend)
- 1/2 cup grated Parmesan cheese
- 1 tsp Italian seasoning
- Salt and pepper, to taste
- Optional garnish: fresh parsley or additional cheese
Instructions

Brown the Meat
In a large pot or Dutch oven over medium-high heat, warm the olive oil. Add the sausage (or ground beef) and cook until browned. Drain excess fat if necessary. -
Sauté Onion & Garlic
Stir in the chopped onion and cook until translucent (about 5 minutes). Add the minced garlic and cook for 1 more minute, being careful not to burn. -
Add Broth & Alfredo Sauce
Pour in the chicken broth. Stir in the jar of Alfredo sauce and Italian seasoning. Bring to a gentle simmer. -
Cook the Noodles
Break the lasagna noodles into pieces and add them to the soup. Cook until noodles are al dente (typically 8–10 minutes, but check the package instructions). -
Stir in the Cheeses
Reduce heat to low. Stir in the shredded mozzarella and grated Parmesan. Season with salt and pepper to taste. -
Serve
Ladle the soup into bowls. Garnish with fresh parsley or extra cheese if desired.
