Creamy Alfredo Lasagna Soup

All the flavors of a classic lasagna—rich Alfredo sauce, noodles, and gooey cheese—transformed into a cozy, one-pot soup.

Ingredients

  • 1 Tbsp olive oil
  • 1 lb ground Italian sausage (mild or hot) or ground beef
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth (or vegetable broth)
  • 1 jar (about 15–16 oz) Alfredo sauce (store-bought or homemade)
  • 8–10 lasagna noodles, broken into pieces
  • 1 cup shredded mozzarella (or Italian cheese blend)
  • 1/2 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • Salt and pepper, to taste
  • Optional garnish: fresh parsley or additional cheese

Instructions

  1. Brown the Meat
    In a large pot or Dutch oven over medium-high heat, warm the olive oil. Add the sausage (or ground beef) and cook until browned. Drain excess fat if necessary.

  2. Sauté Onion & Garlic
    Stir in the chopped onion and cook until translucent (about 5 minutes). Add the minced garlic and cook for 1 more minute, being careful not to burn.

  3. Add Broth & Alfredo Sauce
    Pour in the chicken broth. Stir in the jar of Alfredo sauce and Italian seasoning. Bring to a gentle simmer.

  4. Cook the Noodles
    Break the lasagna noodles into pieces and add them to the soup. Cook until noodles are al dente (typically 8–10 minutes, but check the package instructions).

  5. Stir in the Cheeses
    Reduce heat to low. Stir in the shredded mozzarella and grated Parmesan. Season with salt and pepper to taste.

  6. Serve
    Ladle the soup into bowls. Garnish with fresh parsley or extra cheese if desired.
