Ingredients

For the Filling:

  • 1 pound ground beef
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 (15 oz) can refried beans
  • 1 tablespoon olive oil
  • 1 packet taco seasoning (or 2 tablespoons homemade taco seasoning)
  • 1/2 cup water
  • 1 cup shredded cheddar or Mexican blend cheese
  • Salt and black pepper to taste

For Assembly:

  • 6 large flour tortillas
  • 1 cup cooked rice (optional)
  • 1/2 cup salsa
  • 1/2 cup sour cream
  • 1/4 cup chopped cilantro (optional)
  • 1 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/4 cup diced red onion

Instructions

Step 1: Prepare the Filling

  1. Heat olive oil in a large skillet over medium heat. Add the chopped onion and garlic, and sauté until softened, about 3–4 minutes.
  2. Add the ground beef to the skillet. Cook until browned, breaking it into crumbles with a spoon. Drain excess fat if needed.
  3. Stir in the taco seasoning and water. Cook for 2–3 minutes until the beef is fully coated and the liquid has thickened.
  4. Heat the refried beans in a small saucepan.

Step 2: Warm the Tortillas

  1. Wrap the tortillas in aluminum foil and warm them in a 350°F (175°C) oven for 5–7 minutes, or heat them individually in a dry skillet over medium heat for about 30 seconds per side.

Step 3: Assemble the Burritos

  1. Lay a warm tortilla flat on a clean surface. Spread 2–3 tablespoons of refried beans down the center.
  2. Add a scoop of the beef mixture, followed by shredded cheese, rice (if using), salsa, lettuce, tomatoes, red onion, sour cream, and cilantro.
  3. Fold the sides of the tortilla inward, then roll it up tightly from the bottom to form a burrito.

Step 4: Heat the Burritos (Optional)

  1. For crispy burritos, heat a skillet over medium heat. Place the burritos seam-side down in the skillet and cook for 2–3 minutes per side until golden brown.

Step 5: Serve

  1. Slice the burritos in half if desired, and serve with extra salsa, sour cream, or guacamole on the side.
