Classic Beef and Bean Burritos

Ingredients
For the Filling:
- 1 pound ground beef
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 (15 oz) can refried beans
- 1 tablespoon olive oil
- 1 packet taco seasoning (or 2 tablespoons homemade taco seasoning)
- 1/2 cup water
- 1 cup shredded cheddar or Mexican blend cheese
- Salt and black pepper to taste
For Assembly:
- 6 large flour tortillas
- 1 cup cooked rice (optional)
- 1/2 cup salsa
- 1/2 cup sour cream
- 1/4 cup chopped cilantro (optional)
- 1 cup shredded lettuce
- 1/2 cup diced tomatoes
- 1/4 cup diced red onion
Instructions
Step 1: Prepare the Filling
- Heat olive oil in a large skillet over medium heat. Add the chopped onion and garlic, and sauté until softened, about 3–4 minutes.
- Add the ground beef to the skillet. Cook until browned, breaking it into crumbles with a spoon. Drain excess fat if needed.
- Stir in the taco seasoning and water. Cook for 2–3 minutes until the beef is fully coated and the liquid has thickened.
- Heat the refried beans in a small saucepan.
Step 2: Warm the Tortillas
- Wrap the tortillas in aluminum foil and warm them in a 350°F (175°C) oven for 5–7 minutes, or heat them individually in a dry skillet over medium heat for about 30 seconds per side.
Step 3: Assemble the Burritos
- Lay a warm tortilla flat on a clean surface. Spread 2–3 tablespoons of refried beans down the center.
- Add a scoop of the beef mixture, followed by shredded cheese, rice (if using), salsa, lettuce, tomatoes, red onion, sour cream, and cilantro.
- Fold the sides of the tortilla inward, then roll it up tightly from the bottom to form a burrito.
Step 4: Heat the Burritos (Optional)
- For crispy burritos, heat a skillet over medium heat. Place the burritos seam-side down in the skillet and cook for 2–3 minutes per side until golden brown.
Step 5: Serve
- Slice the burritos in half if desired, and serve with extra salsa, sour cream, or guacamole on the side.
