Citrus Salad with Grapefruit and Oranges
A bright and refreshing salad featuring tangy grapefruit and juicy oranges, all tossed in a zesty dressing. Perfect for a light lunch or as a vibrant side at dinner parties!

Yield

Makes 4 servings.

Ingredients

For the Salad

  • 2 grapefruits, peeled and segmented
  • 2 oranges, peeled and segmented
  • 1/2 small red onion, very thinly sliced
  • 2 cups mixed greens or baby arugula
  • A handful of fresh mint or basil leaves, roughly torn

For the Dressing

  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon fresh lemon juice (or lime juice)
  • 1 teaspoon honey (or maple syrup)
  • Pinch of salt and freshly ground black pepper

Instructions

Step 1: Prepare the Citrus

  1. Using a sharp knife, remove the peel and white pith from the grapefruits and oranges.
  2. Slice between the membranes to release the citrus segments, catching any juice in a bowl. Set segments aside.

Step 2: Make the Dressing

  1. In a small bowl (or a jar with a tight-fitting lid), whisk together the olive oil, lemon juice, honey, salt, and pepper.
  2. Taste and adjust the flavors, adding more honey for sweetness or more citrus juice for extra tang.

Step 3: Assemble the Salad

  1. If using greens, place them in a large serving bowl or on a platter.
  2. Arrange the grapefruit and orange segments on top.
  3. Scatter the red onion over the fruit.
  4. Sprinkle with fresh mint or basil leaves for added flavor and color.

Step 4: Serve

  1. Drizzle the dressing over the salad just before serving (or serve it on the side).
  2. Toss gently to coat and enjoy immediately.

How the Salad Will Look

A colorful medley of bright pink and orange citrus segments, and delicate greens. The dressing provides a glossy sheen, and the fresh mint or basil leaves lend a final pop of vibrant color.
