Ingredients
For the Peanut Butter Balls:
- 1 cup natural peanut butter (well-stirred, no added sugar or oils)
- 2 tablespoons unsalted butter, softened
- 1 teaspoon vanilla extract
- 1 1/2 cups powdered sugar, sifted (adjust as needed for consistency)
- 1/4 teaspoon salt
For the Chocolate Coating:
- 12 ounces semi-sweet or dark chocolate, chopped (or chocolate chips)
- 1 tablespoon coconut oil or shortening (optional, for a smoother coating)
Optional Garnishes:
- Crushed peanuts
- Sea salt flakes
Instructions
Step 1: Make the Peanut Butter Mixture
- In a large mixing bowl, beat together the natural peanut butter, softened butter, and vanilla extract until smooth.
- Gradually add the powdered sugar and salt, mixing until the mixture becomes thick enough to roll.
- Note: Natural peanut butter is runnier than processed, so you may need to adjust the amount of powdered sugar to achieve a firm consistency.
- Scoop out about 1 tablespoon of the mixture and roll it into a smooth ball. Place on a baking sheet lined with parchment paper.
- Repeat until all the peanut butter mixture is used. You should have about 24 balls.
- Chill the balls in the refrigerator for at least 30 minutes to firm up.
Step 2: Melt the Chocolate
- In a heatproof bowl, melt the chopped chocolate and coconut oil (if using) over a double boiler or in the microwave.
- Double Boiler Method: Place the bowl over a pot of simmering water (do not let the bowl touch the water) and stir until melted.
- Microwave Method: Heat in 30-second intervals, stirring well each time, until smooth.
- Let the melted chocolate cool slightly, but keep it liquid to ensure an easy coating process.
Step 3: Coat the Peanut Butter Balls
- Using a fork or toothpick, dip each chilled peanut butter ball into the melted chocolate, ensuring it is fully coated.
- Gently tap off excess chocolate and place the coated ball back on the parchment-lined baking sheet.
- If desired, sprinkle crushed peanuts, sea salt, or sprinkles on top before the chocolate sets.
- Once all the balls are coated, chill in the refrigerator for at least 30 minutes until the chocolate is fully set.

- Serve: Enjoy chilled or at room temperature.
- Store: Keep in an airtight container in the refrigerator for up to 2 weeks.
- Freeze: For longer storage, freeze for up to 3 months. Thaw in the refrigerator before serving.
