Yield
Serves 6–8
Ingredients
For the Filling:
- 5 cups frozen cherries
- 1/2 cup granulated sugar
- 2 tablespoons cornstarch
- 1/4 cup water
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract (optional, for added flavor)
For the Topping:
- 1 cup all-purpose flour
- 1/4 cup granulated sugar
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 cup cold unsalted butter, cubed
- 1/2 cup whole milk
Instructions
Step 1: Preheat the Oven
Preheat your oven to 375°F (190°C). Grease a 9x9-inch baking dish or a deep-dish pie pan.
Step 2: Make the Cherry Filling
- In a medium saucepan, combine the frozen cherries, granulated sugar, and water. Cook over medium heat, stirring occasionally, until the cherries release their juices (about 5–7 minutes).
- In a small bowl, mix the cornstarch with 2 tablespoons of water to make a smooth slurry.
- To temper the slurry, take 2–3 tablespoons of the warm cherry liquid from the saucepan and stir it into the cornstarch mixture. Mix thoroughly to avoid lumps.
- Gradually pour the tempered slurry into the saucepan with the cherry mixture, stirring constantly.
- Cook for another 2–3 minutes, or until the filling thickens to a glossy consistency.
- Remove from heat and stir in the vanilla and almond extracts.
- Pour the thickened cherry filling into the prepared baking dish.
Step 3: Make the Biscuit Topping
- In a medium bowl, whisk together the flour, sugar, baking powder, and salt.
- Using a pastry cutter or your fingers, cut the cold butter into the flour mixture until it resembles coarse crumbs.
- Add the milk and stir until just combined. The dough will be thick and slightly sticky.
Step 4: Assemble and Bake the Cobbler
- Drop spoonfuls of the biscuit dough over the cherry filling, leaving some gaps for the filling to bubble through.
- Place the dish in the preheated oven and bake for 30–35 minutes, or until the topping is golden brown and the filling is bubbly.
Step 5: Cool and Serve
Allow the cobbler to cool for at least 15 minutes before serving. Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream, if desired.
