  • 5 cups frozen cherries
  • 1/2 cup granulated sugar
  • 2 tablespoons cornstarch

For the Topping:

  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup cold unsalted butter, cubed
  • 1/2 cup whole milk

Instructions

Step 1: Preheat the Oven
Preheat your oven to 375°F (190°C). Grease a 9x9-inch baking dish or a deep-dish pie pan.


Step 2: Make the Cherry Filling

  1. In a medium saucepan, combine the frozen cherries, granulated sugar, and water. Cook over medium heat, stirring occasionally, until the cherries release their juices (about 5–7 minutes).
  2. In a small bowl, mix the cornstarch with 2 tablespoons of water to make a smooth slurry.
  3. To temper the slurry, take 2–3 tablespoons of the warm cherry liquid from the saucepan and stir it into the cornstarch mixture. Mix thoroughly to avoid lumps.
  4. Gradually pour the tempered slurry into the saucepan with the cherry mixture, stirring constantly.
  5. Cook for another 2–3 minutes, or until the filling thickens to a glossy consistency.
  6. Remove from heat and stir in the vanilla and almond extracts.
  7. Pour the thickened cherry filling into the prepared baking dish.

Step 3: Make the Biscuit Topping

  1. In a medium bowl, whisk together the flour, sugar, baking powder, and salt.
  2. Using a pastry cutter or your fingers, cut the cold butter into the flour mixture until it resembles coarse crumbs.
  3. Add the milk and stir until just combined. The dough will be thick and slightly sticky.

Step 4: Assemble and Bake the Cobbler

  1. Drop spoonfuls of the biscuit dough over the cherry filling, leaving some gaps for the filling to bubble through.
  2. Place the dish in the preheated oven and bake for 30–35 minutes, or until the topping is golden brown and the filling is bubbly.
