Serves 4-6

Ingredients

For the Buffalo Chicken:

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 cup buffalo sauce (like Frank’s RedHot)
  • 2 tablespoons unsalted butter, melted

For the Alfredo Sauce:

  • 2 tablespoons unsalted butter
  • 1-2 cloves garlic, minced
  • 1 1/2 cups heavy cream
  • 1 1/2 cups grated Parmesan cheese (plus extra to garnish)
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt (to taste)

For the Pasta:

  • 12 ounces fettuccine pasta
  • 2 tablespoons chopped parsley (for garnish)
  • Extra buffalo sauce for drizzling (optional)

Instructions

Step 1: Cook the Pasta

  1. Cook the fettuccine according to package instructions until al dente.
  2. Drain and set aside, reserving 1/2 cup of pasta water.

Step 2: Cook the Buffalo Chicken

  1. In a large skillet over medium heat, heat the olive oil.
  2. Season the chicken pieces with salt, pepper, and garlic powder.
  3. Add the chicken to the skillet and cook for 5-6 minutes, until golden and cooked through.
  4. In a bowl, combine the melted butter and buffalo sauce. Pour over the chicken and toss to coat. Keep warm.

Step 3: Make the Alfredo Sauce

  1. In a separate large skillet or saucepan, melt the butter over medium heat.
  2. Add the minced garlic and cook for 1 minute until fragrant.
  3. Pour in the heavy cream and bring to a gentle simmer.
  4. Whisk in the grated Parmesan cheese, stirring until the sauce is smooth and thickened.
  5. Season with black pepper and a pinch of salt (adjust to taste).

Step 4: Combine the Pasta and Sauce

  1. Add the cooked pasta to the Alfredo sauce and toss to coat. If the sauce is too thick, add a splash of reserved pasta water until it reaches the desired consistency.

Step 5: Assemble the Dish

  1. Top the pasta with the buffalo chicken.
  2. Drizzle with extra buffalo sauce if you like more heat.
  3. Garnish with chopped parsley & sprinkle on freshly grated parmesan.

Step 6: Serve
Serve warm and enjoy this creamy, spicy, and satisfying dish!

Tips for Success

  1. Adjust the Heat: For milder flavor, use less buffalo sauce. For more spice, add extra sauce or a sprinkle of red pepper flakes.
  2. Add Veggies: Stir in sautéed bell peppers, spinach, or broccoli for extra nutrition and color.
  3. Use Fresh Parmesan: Freshly grated Parmesan melts better than pre-shredded and gives a creamier texture.
  4. Don’t Overcook the Chicken: Cook just until the chicken is no longer pink to keep it tender and juicy.
  5. Make It Ahead: The Alfredo sauce and buffalo chicken can be prepared in advance and reheated before serving.

This Buffalo Chicken Alfredo brings the best of creamy pasta and spicy chicken together for a meal that's sure to please!
