Breakfast Lasagna

Ingredients

For the Layers:

  • 6 large eggs
  • 1/4 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon butter
  • 1 pound breakfast sausage, crumbled (or bacon, cooked and crumbled)
  • 1 1/2 cups shredded cheddar cheese
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup diced bell peppers (optional)
  • 1/2 cup diced onions (optional)
  • 6 lasagna noodles (regular or oven-ready)

For the Sauce:

  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 2 cups whole milk
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon nutmeg (optional)
  • Salt and pepper to taste

Instructions

Step 1: Cook the Lasagna Noodles
If using regular lasagna noodles, cook them according to the package instructions. Drain and set aside.


Step 2: Make the Scrambled Eggs
In a bowl, whisk together eggs, milk, salt, and pepper. Heat a non-stick skillet over medium heat, add butter, and scramble the eggs until softly set. Remove from heat and set aside.


Step 3: Cook the Sausage and Veggies
In the same skillet, cook the breakfast sausage until browned. If using bell peppers and onions, sauté them until soft. Drain any excess fat.


Step 4: Prepare the Sauce
In a medium saucepan, melt butter over medium heat. Whisk in the flour and cook for 1 minute. Gradually whisk in milk, stirring constantly, until the mixture thickens. Add garlic powder, onion powder, nutmeg (if using), salt, and pepper. Remove from heat.


Step 5: Assemble the Lasagna

  1. Preheat the oven to 375°F (190°C).
  2. In a greased 9x13-inch baking dish, spread a thin layer of sauce on the bottom.
  3. Add a layer of lasagna noodles, followed by scrambled eggs, sausage, shredded cheeses, and a drizzle of sauce.
  4. Repeat the layers, ending with cheese on top.

Step 6: Bake the Lasagna
Cover the dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 10–15 minutes, or until the top is golden and bubbly.


Step 7: Serve
Let the lasagna cool for 5–10 minutes before slicing. Serve warm and enjoy your delicious breakfast creation!
