Ingredients

For the Pasta & Sauce

  • 1 lb elbow macaroni
  • 4 tablespoons unsalted butter
  • 4 tablespoons all-purpose flour
  • 4 cups whole milk, warmed
  • 1 cup heavy cream
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • Salt and black pepper, to taste
  • 3 cups shredded sharp cheddar cheese
  • 1 1/2½ cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese

For the Topping

  • 1 1/2 cups panko breadcrumbs
  • 2 tablespoons unsalted butter, melted
  • 1/4 teaspoon paprika
  • 2 tablespoons grated Parmesan cheese

Instructions

Step 1: Cook the Pasta
Bring a large pot of salted water to a boil. Cook the macaroni according to package instructions until al dente. Drain and set aside.

Step 2: Prepare the Cheese Sauce
In a large saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1–2 minutes, stirring constantly. Gradually whisk in the warmed milk and cream, ensuring no lumps remain. Cook until the mixture thickens, about 5–7 minutes. Stir in the Dijon mustard, garlic powder, paprika, salt, and pepper. Reduce the heat to low and gradually add the cheddar, mozzarella, and Parmesan cheeses, stirring until melted and smooth.

Step 3: Combine Pasta and Sauce
Add the cooked macaroni to the cheese sauce. Stir until the pasta is well-coated.

Step 4: Assemble the Dish
Preheat the oven to 375°F (190°C). Grease a ceramic baking dish (or use non-stick spray). Pour the mac and cheese mixture into the dish, spreading it evenly.

Step 5: Prepare the Topping
In a small bowl, combine the panko breadcrumbs, melted butter, paprika, and Parmesan cheese. Sprinkle evenly over the mac and cheese.

Step 6: Bake
Bake for 20–25 minutes, or until the topping is golden brown and crispy. For extra crispiness, broil for 2–3 minutes, watching closely to prevent burning.

Step 7: Serve
