Ingredients

For the Waffles:

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 2 tablespoons sugar
  • 2 large eggs
  • 1 1/2 cups whole milk
  • 1/3 cup unsalted butter, melted
  • 1 teaspoon vanilla extract

For the Filling:

  • 8 strips of thick-cut bacon, cooked until crispy
  • 4 slices sharp cheddar cheese
  • 4 large eggs, scrambled (or fried)
  • 4 tablespoons maple syrup

Instructions

Step 1: Make the Waffles

  1. Preheat your waffle iron and lightly grease it with cooking spray.
  2. In a large bowl, whisk together flour, baking powder, salt, and sugar.
  3. In another bowl, whisk eggs, milk, melted butter, and vanilla extract. Add wet ingredients to the dry ingredients and mix until just combined.
  4. Pour the batter into the waffle iron and cook according to the manufacturer’s instructions until golden and crispy. Repeat to make 4 waffles.

Step 2: Assemble the Sandwiches

  1. Place a slice of cheddar cheese on one waffle, followed by 2 strips of crispy bacon and one fried egg.
  2. Drizzle 1 tablespoon of maple syrup over the egg.
  3. Top with a second waffle to form a sandwich.

Step 3: Serve

  1. Serve the waffle sandwiches warm with extra maple syrup for dipping if desired.
