Ingredients
For the Waffles:
- 2 cups all-purpose flour
- 1 tablespoon baking powder

- 2 large eggs
- 1 1/2 cups whole milk
- 1/3 cup unsalted butter, melted
- 1 teaspoon vanilla extract
For the Filling:
- 8 strips of thick-cut bacon, cooked until crispy
- 4 slices sharp cheddar cheese
- 4 large eggs, scrambled (or fried)
- 4 tablespoons maple syrup
Instructions
Step 1: Make the Waffles
- Preheat your waffle iron and lightly grease it with cooking spray.
- In a large bowl, whisk together flour, baking powder, salt, and sugar.
- In another bowl, whisk eggs, milk, melted butter, and vanilla extract. Add wet ingredients to the dry ingredients and mix until just combined.
- Pour the batter into the waffle iron and cook according to the manufacturer’s instructions until golden and crispy. Repeat to make 4 waffles.
Step 2: Assemble the Sandwiches
- Place a slice of cheddar cheese on one waffle, followed by 2 strips of crispy bacon and one fried egg.
- Drizzle 1 tablespoon of maple syrup over the egg.
- Top with a second waffle to form a sandwich.
Step 3: Serve
- Serve the waffle sandwiches warm with extra maple syrup for dipping if desired.
