Ingredients
For the Pie Crust:
- 2 1/2 cups all-purpose flour
- 1 teaspoon salt
- 1 teaspoon granulated sugar
- 1 cup (2 sticks) cold unsalted butter, cubed
- 6–8 tablespoons ice water
For the Filling:
- 6 cups thinly sliced and diced, peeled tart apples (such as Granny Smith)
- 1/2 cup raisins (soaked)
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 2 tablespoons all-purpose flour
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground allspice (optional)
- 1 tablespoon lemon juice
- 2 tablespoons unsalted butter, cut into small pieces
For the Topping:
- 1 egg, beaten (for egg wash)
- 1 tablespoon granulated sugar (for sprinkling)
Instructions
Step 1: Make the Pie Crust
- In a large mixing bowl, whisk together the flour, salt, and sugar.
- Using a pastry cutter or your fingers, cut in the cold butter until the mixture resembles coarse crumbs.
- Gradually add the ice water, 1 tablespoon at a time, mixing until the dough comes together. Be careful not to overmix.
- Divide the dough into two disks, wrap in plastic wrap, and refrigerate for at least 30 minutes.
Step 2: Preheat the Oven
Preheat your oven to 375°F (190°C). Place a rack in the lower third of the oven.
Step 3: Prepare the Filling
In a large bowl, combine the sliced apples, raisins, granulated sugar, brown sugar, flour, cinnamon, nutmeg, allspice (if using), and lemon juice. Toss well to coat evenly.
Step 4: Assemble the Pie
- Roll out one disk of chilled pie dough on a floured surface and fit it into a 9-inch pie dish. Trim the edges to leave a slight overhang.
- Pour the apple-raisin mixture into the crust, spreading it evenly. Dot the filling with small pieces of butter.
- Roll out the second disk of dough and place it over the filling. Trim the edges and crimp the top and bottom crusts together to seal.
- Cut slits in the top crust to allow steam to escape. Brush the top crust with beaten egg and sprinkle with granulated sugar. (or) You can make a lattice top for the pie.
Step 5: Bake the Pie
- Place the pie on a baking sheet to catch any drips. Bake in the preheated oven for 50–60 minutes, or until the crust is golden brown and the filling is bubbling.
- If the edges of the crust brown too quickly, cover them with strips of aluminum foil.
Step 6: Cool and Serve
- Remove the pie from the oven and let it cool on a wire rack for at least 2 hours to allow the filling to set.
- Slice and serve warm with a scoop of vanilla ice cream or a dollop of whipped cream.
