Yield
Serves 8-10
Ingredients
For the Loaf:
2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup unsalted butter, softened, room temperature
3/4 cup granulated sugar
2 large eggs, room temperature
1 teaspoon vanilla extract
3/4 cup buttermilk or whole milk
For the Apple Mixture:
2 medium tart apples, peeled, cored, and chopped into 1/2-inch pieces
2 tablespoons granulated sugar
1 teaspoon ground cinnamon
1 tablespoon fresh lemon juice
For the Cinnamon-Sugar Swirl:
1/3 cup brown sugar
1 tablespoon ground cinnamon
For the Glaze:
1 cup powdered sugar, sifted
1-2 tablespoons milk or cream
1/2 teaspoon vanilla extract
Instructions
Step 1: Preheat the Oven
Preheat the oven to 350°F (175°C). Grease and lightly flour a 9 x 5-inch loaf pan or line it with parchment paper.
Step 2: Prepare the Apple Mixture
In a small bowl, combine the apples, 2 tablespoons sugar, 1 teaspoon cinnamon, and lemon juice. Stir gently and set aside.
Step 3: Make the Cinnamon-Sugar Swirl
In another small bowl, mix together the brown sugar and cinnamon until evenly combined.
Step 4: Make the Batter
In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. In a large mixing bowl, cream the butter and 3/4 cup sugar until light and fluffy, about 2-3 minutes. Beat in the eggs one at a time, then add the vanilla. Add half of the dry ingredients and mix on low until just combined. Pour in the buttermilk, then add the remaining dry ingredients, mixing only until no dry streaks remain.
Step 5: Layer and Mix
Spoon half of the batter into the prepared loaf pan. Spoon half of the apple mixture over the batter, followed by half of the cinnamon-sugar mixture. Repeat with the remaining batter, apples, and cinnamon-sugar.
Step 6: Bake the Bread
Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs. If the top browns too quickly, tent loosely with foil after about 40 minutes.
Step 7: Cool and Glaze
Allow the bread to cool in the pan for 10-15 minutes, then carefully remove and let it cool on a wire rack. In a small bowl, whisk together the powdered sugar, milk or cream, and vanilla until smooth. Drizzle the glaze over the slightly warm bread and let it set before slicing.
