Ingredients

For the Dutch Baby:

  • 3 large eggs
  • 1/2 cup all-purpose flour
  • 1/2 cup whole milk
  • 1 tablespoon granulated sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 3 tablespoons unsalted butter

For the Apple Topping:

  • 2 medium apples (Granny Smith or Honeycrisp), peeled, cored, and thinly sliced
  • 2 tablespoons unsalted butter
  • 2 tablespoons brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg (optional)
  • 1 teaspoon lemon juice

Optional Garnishes:

  • Powdered sugar (for dusting)
  • Maple syrup or honey

Instructions

1. Preheat the Oven

  • Preheat your oven to 425°F (220°C). Place a 10–12 inch cast iron skillet or ovenproof pan in the oven while it preheats.

2. Prepare the Batter

  1. In a blender, combine the eggs, flour, milk, sugar, vanilla extract, and salt. Blend for 20–30 seconds until smooth. Let the batter rest for 10 minutes to allow the flour to fully hydrate.

3. Make the Apple Topping

  1. While the batter rests, melt the butter in a skillet over medium heat.
  2. Add the apple slices, brown sugar, cinnamon, nutmeg, and lemon juice. Cook, stirring occasionally, for 5–7 minutes, or until the apples are tender and caramelized. Remove from heat and set aside.

4. Cook the Dutch Baby

  1. Carefully remove the preheated skillet from the oven and add the butter for the Dutch Baby, swirling to coat the pan.
  2. Pour the batter into the hot skillet and immediately return it to the oven.
  3. Bake for 20–25 minutes, or until the Dutch Baby is puffed and golden brown around the edges.

5. Assemble and Serve

  1. Remove the Dutch Baby from the oven and top it with the caramelized apples.
  2. Dust with powdered sugar and drizzle with maple syrup or honey if desired.
  3. Serve immediately, as the pancake will begin to deflate as it cools.
