1/2 cup cold unsalted butter, cubed
2-4 tablespoons ice water
For the Apple Filling
6 cups apples, peeled, cored, and sliced (Granny Smith, Honeycrisp, or a mix)1/2 cup granulated sugar
1/4 cup light brown sugar, packed
2 tablespoons all-purpose flour
1 tablespoon lemon juice
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg (optional)
1/4 teaspoon salt
For the Crumble Topping
1 cup all-purpose flour1/2 cup light brown sugar, packed
1/4 cup granulated sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1/2 cup unsalted butter, melted
Instructions
Make the Pie Crust
In a medium bowl, whisk together the flour and salt. Add the cold, cubed butter and use a pastry cutter or your fingers to work the butter into the flour until the mixture resembles coarse crumbs.
Gradually add ice water, 1 tablespoon at a time, mixing until the dough just comes together. Form the dough into a ball, flatten it into a disk, wrap it in plastic wrap, and chill for at least 30 minutes.
On a lightly floured surface, roll out the chilled dough into a 12-inch circle. Transfer the dough to a 9-inch pie dish, gently pressing it into the bottom and sides.
Trim any excess and crimp the edges. Place the pie crust in the refrigerator while you prepare the filling.
Make the Apple Filling
In a large bowl, combine the sliced apples, granulated sugar, brown sugar, flour, lemon juice, cinnamon, nutmeg (if using), and salt.
Toss until the apples are evenly coated. Let the filling sit for 10 minutes to allow the flavors to meld.
Prepare the Crumble Topping
In a medium bowl, mix together the flour, brown sugar, granulated sugar, cinnamon, and salt.
Add the melted butter and stir with a fork until the mixture forms coarse crumbs.
Assemble the Pie
Pour the apple filling into the chilled pie crust, spreading it evenly. Sprinkle the crumble topping over the apples, making sure to cover them completely.
Bake
Preheat the oven to 375°F (190°C). Place the pie on the middle rack and bake for 45-50 minutes, or until the filling is bubbly and the crumble topping is golden brown.
If the crust edges are browning too quickly, cover them with foil or a pie shield during the last 15 minutes of baking.
Cool and Serve
Allow the pie to cool on a wire rack for at least 2 hours to set. Serve at room temperature or slightly warm with a scoop of vanilla ice cream or a dollop of whipped cream.

Kitchen Tips, Great Ideas, How to Save Money
-
Make-Ahead Crust: Prepare the pie crust a day in advance, wrap it tightly, and refrigerate until ready to use.
-
Mix Apple Varieties: Combine tart apples (like Granny Smith) with sweet apples (like Honeycrisp) for a well-rounded flavor profile.
-
Prevent Soggy Crust: Brush the bottom of the pie crust with a beaten egg white to create a barrier and prevent sogginess.
-
Add a Crunchy Twist: Mix chopped walnuts or pecans into the crumble topping for added texture and nutty flavor.
-
Enhance with Spices: Add a pinch of ground ginger, cloves, or allspice to the filling for a deeper, more complex spice profile.
-
Pre-Bake the Crust: Blind bake the crust for 10 minutes before adding the filling to ensure a crisp bottom.
-
Use Lemon Juice: Toss the apples with lemon juice to prevent browning and enhance the natural flavors of the fruit.
-
Thicken the Filling: Add 1-2 tablespoons of cornstarch to the apple filling to keep it from becoming too runny during baking.
-
Make Individual Pies: Prepare single-serving portions in ramekins for easy serving and portion control.
-
Freeze for Later: Freeze the unbaked pie for up to 3 months, then bake directly from the freezer, adding 15 minutes to the baking time.
