Ingredients

For the Casserole

  • 4 boneless, skinless chicken breasts (cut into pieces)
  • 1 cup uncooked long-grain white rice
  • 2 cups chicken broth (preferably low sodium)
  • 1 cup heavy cream or half-and-half
  • 1 packet (1 oz) dry Italian dressing mix
  • 1 can (10.5 oz) condensed cream of mushroom soup (or cream of chicken soup)
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 2 tablespoons unsalted butter, melted

Optional Toppings

  • Fresh parsley, chopped, for garnish
  • Additional Parmesan cheese for sprinkling

Instructions

Step 1: Preheat the Oven

  1. Preheat your oven to 350°F (175°C).
  2. Lightly grease a 9x13-inch casserole dish.

Step 2: Prepare the Rice Layer

  1. Spread the uncooked rice evenly over the bottom of the prepared casserole dish.

Step 3: Make the Sauce

  1. In a medium bowl, whisk together the chicken broth, cream, dry Italian dressing mix, cream of mushroom soup, garlic powder, and black pepper until smooth.
  2. Pour half of the sauce mixture over the rice in the dish.

Step 4: Add the Chicken

  1. Arrange the chicken pieces on top of the rice layer.
  2. Pour the remaining sauce over the chicken, ensuring everything is evenly coated.

Step 5: Add Cheese and Bake

  1. Sprinkle the Parmesan cheese and shredded mozzarella over the top of the casserole.
  2. Drizzle the melted butter evenly across the top.

Step 6: Bake the Casserole

  1. Cover the dish tightly with aluminum foil and bake for 45 minutes.
  2. Remove the foil and bake for an additional 15–20 minutes, or until the rice is tender, the chicken is cooked through, and the top is golden and bubbly.

Step 7: Serve

  1. Remove the casserole from the oven and let it rest for 5–10 minutes before serving.
  2. Garnish with chopped parsley and additional Parmesan cheese, if desired.

Kitchen Tips

  • For extra flavor, marinate the chicken pieces in the Italian dressing mix and a little olive oil for 30 minutes before assembling the casserole.
  • Swap out the cream of mushroom soup for cream of chicken or cream of celery if you prefer.
  • Use brown rice instead of white rice for a nuttier flavor and added nutrients (adjust the cooking time as needed).

This Angel Chicken Rice Casserole is the perfect comfort food, combining creamy textures, tender chicken, and perfectly cooked rice. A heavenly dinner for the whole family
